There are many cask programmes that you may have looked at elsewhere in Ireland however we at the Croithlí Distillery have a very different offering. This includes
  1. Charentais Pot Stills. – Our spirit is distilled using stills that are unique to Croithlí and to whiskey production in Ireland.  These stills were previously used for Cognac production In France, upcycled and now producing beautiful spirit in Croithlí.
  1. Direct Fired Heating – The still are specially designed with a convex base to allow the direct gas fire to burn evenly in the centre. The heat produced by direct fire (rather than steam, used by most distilleries) produces the  ‘Maillard’ effect.
  1. MaturationNested between Donegal’s wild Atlantic coast and the Derryveagh mountains our warehouse offers the perfect temperate climate for whiskey maturation in grade A Bourbon casks
  1. Cask Finishing – We offer Single Malt and our speciality Single Pot Still finished in Oloroso, Pedro Ximénez, Madeira, Pinot Blanc and Cognac casks
  1. Sample what your buying  – Depending on the  interest level, we can provide a range of samples including  new  make, 18 months spirit and 3 year spirit which charts the journey of the maturation process and quality of the spirit.

The Morton Cask Release

Recognising the first business to operate out of our  historic building, we are releasing a limited number of casks from our Batch 4 Irish Single Malt production. Donegal handcrafted bespoke carpets were made here from  1904–1916. Founded by Andrew Morton, he tapped into  the knitting, weaving and embroidery skills that were prevalent  in Donegal. To quote Morton himself about Donegal hand-made carpets  “the pile stood like pearls.” ‘Donegals’ as they are known can be found in such  places as Aras an Uachtarain, The Vatican, Dublin Castle,  Buckingham Palace and The White House.

Our Single malt is crafted from a mash bill that includes 80% distillers malted barley and 20% vienna  malted barley.

Be part of the revival of traditional Donegal Gaeltacht whiskey with ownership of a limited offering Irish Pot Still whiskey from our batch 3 production.

Back in the 1880s, this Irish style whiskey was drink of choice in high society and the world looked to Irish Single Pot Still as the definitive Irish expression of the distiller’s art. Sadly over 100 years later nothing was left, except the old chimneys of closed, abandoned distilleries and with it the disappearance of Irish Single Pot Still.

Here at the Crolly Distillery we are adding to the revival of Irish Single Pot Still Whiskey having laid down our very first cask of Irish Single Pot Still Whiskey in 2021, the first in Donegal for many a year and indeed it may be the first ever recorded!  We are  now offering casks from our Batch 3 production with a mash bill that includes 40% malted barley  40% un-malted barley 15 % oats and 5 % Rye laid down in 2024
