DIRECT FIRED & DOUBLE DISTILLED IN CHARENTAIS POT STILLS
Our Cask 2 premium single malt has been sumptuously flavoured by our direct-fired Charentais copper pot stills from the Cognac region of France.
These majestic stills are specially designed with a convex base to allow the direct gas fire to burn evenly in the centre.
The heat produced by the direct fire in our unique distillation process (rather than steam, which is used by most whiskey distillers), creates what is known as the ‘Maillard’ effect — a browning process similar to searing a steak on a hot griddle.
This effect gives a very distinctive depth of flavour to our single malt. The result is a decadently rich whiskey that generates curiosity, anticipation and appreciation, reflecting the warm welcome and the spontaneous hospitality of the Gaelic spirit.
Not only do our Charentais copper pot stills produce unique artisan whiskey, they are truly a work of art in themselves.
CASK MANAGEMENT
The cask was sourced from Heaven Hills, the world famous bourbon producers in Kentucky, USA. We have matured the cask on-site at our historic distillery building in Croithlí, Co. Donegal.
The temperate climate at our remote distillery location, nestled in the Donegal highlands between the wild Atlantic coast and the magnificent Derryveagh mountains, provides the perfect maturation conditions for premium whiskey.
OUR MASTER DISTILLER’S TASTING NOTES
Our Master Distiller Julio Diana described this momentous Croithlí whiskey as having a “sweet nose”, with hints of caramel, brown sugar and soft fruity notes. Julio adds that it’s “a little more savoury than the nose suggests on the palate, with toasted nut, and clove notes”. The finish, he explains, is “light, with sweet spice, which will develop over time”.
